SEABLUE, the latest culinary experience from award-winning chef Michael Mina, is open now in the MGM Grand's Studio Walk. Designed by famed architect Adam Tihany with a focus on the clean elements of water and stone, SEABLUE is a "Mediterranean" influenced fish market with moderate prices.
Guests are greeted outside the entrance by a dramatic cylindrical tank filled with silvery shimmering fish. A theme re-emphasized throughout the dining room artfully designed walls of blue stone and flowing water.
The focal point inside the restaurant is a centrally located three-sided bar with two open preparation areas. One side of the bar showcases fresh shellfish from the raw bar market menu. The other side displays items from the second market menu, a selection of greens, fruits, vegetables, proteins and dressings. Also, the full menu is available at the bar.
Freshness is a key element with the fish being flown in from all over the world and grilled on a free-standing wood-fired "island" grill. Guests can order individual small plates for sampling or large plates that include entrees such as Dover sole, lobster and cod. Dinner prices range from $15 - $45.
SEABLUE seats 130 people in the main dining room and 34 in the private room. For information or reservations, call 702-891-3486.
